Noodle Restaurant Tetsu (Authentic Tsukemen and Ramen)

Being particular with our broth and noodle making for both Tsukemen and Ramen, we provide you the absolute ideal combination. With blessings provided by both the land (chicken) and the sea (fish), we extract their essense as the base for our soup and make use of it to the fullest, bringing naturalness in flavour. As we are also selective of the flour and water we use in processing our noodles, all 3 types of noodles we serve have long and entangling finishes making them go well with the soup as well as presenting a chewy texture. 

 

Our Japanese Chashu (roasted pork fillet) is one of our exquisite charms as we take time to simmer it in our special sauce until it becomes tender. The sauce is specially made from pork ribs in which the sweetness is drawn out from the fat. With fresh eggs delivered from the local poultry farms as our ingredients for one of our toppings: soft boiled eggs, which is of excellent compatibility with our ramen.

The base for our "Rich Chicken and Fish Essence Tsukemen" is a mixture of chicken bone broth, in which grinded quality chicken bones are simmered along with chicken feets, and aromatic bonito extract. The golden ratio of the mixture makes it extraordinarily exquisite.

As for the broth for our "Flying Fish Broth Ramen", we present you its delicate taste brought to you by our unique ways of extracting a savoury flavour, combining essense from both high-classed flying fish and quality kelp from Hokkaido. This dish is relatively refreshingly mild yet  holds a firm taste, making it something you can eat everyday and still find it delicious.

Last but not least, we boil the grinded chicken bones and chicken feet to attain a rich chicken bone broth that has a slight viscous texture to use as our base for "Chicken Bone Broth Ramen", then top it of with our salt based sauce.
