High-quality ingredients such as fresh seafood from Noto of Ishikawa Prefecture, and Japanese phantom black beef "Katsube beef" are used.
In addition to the delicate flavors of well-used ingredients, the setup engenders a sense of the seasons.

Katsube beef is a Japanese black beef which produces only 50 cattle cows per year and is rarely available outside of Shimane.
